A Sanepid inspection in Lublin doesn't have to end with a 1500 PLN fine or a premises closure. Most administrative penalties result from missing three specific signatures in HACCP documents or a dirty gasket in the under-counter fridge. HACCP and GHP/GMP documentation is the foundation

Employees and their medical certificates
The Sanepid booklet is a relic in the physical sense, but a medical certificate for sanitary-epidemiological purposes is sacred. Each of your 6 or 12 employees must have a current document. The biggest problem arises with seasonal workers or students employed on mandate contracts. If Ms. Anna started work on Monday and is supposed to pick up her tests on Friday, she has no right to touch food until then. The inspector will check the attendance list and compare it with the dates on the medical certificates.
In addition to tests, clean protective clothing is important. A cook's dirty apron is recorded as a lack of personal hygiene in the report. Make sure the staff restroom has liquid soap, paper towels, and handwashing instructions. How to talk to a Sanepid inspector
When an official enters the company, calmness is most important. Do not try to hide documents or lie about the delivery date of goods. Inspectors are people who do their job 8 hours a day and have seen every attempt at deception. It's best to designate one contact person who knows where the keys to the documentation cabinet and pest control results are kept. If the owner is not on-site, the manager must know what to do. Lack of access to documentation during an inspection is a direct path to a penalty for obstructing official activities.
